Rosewater Cardamom and Almond Cake (gluten free) recipe from Melanie at Cliffs Chiropractor Southend

cake recipe from Melaine at Cliffs Chiropractor SouthendWe had so many requests for the recipe for this cake during our Macmillan Coffee Morning Fundraiser that Melanie has kindly written out all the instructions for you.

220g butter
220g unrefined caster sugar
275g ground almonds
3 large eggs
150g polenta
1 tsp baking powder (gluten free)
Cake
12 green cardamom pods

For the syrup
The juice of a large ripe lemon
5 tbsps mild honey such as orange blossom
5 cardamom pods
1 tbsp rosewater

You will need a non-stick loose-bottomed cake tin about 20cm in diameter, greased and lined on the base. Set the oven at 180C/ fan 160C/ gas mark 4.

Put the butter and caster sugar into a bowl and beat until light and fluffy.
Break the eggs into a small bowl and beat lightly with a fork then stir them into the mixture. Mix the polenta and baking powder and then fold it into the mixture with the zest and juice. Crush the cardamom pods and extract the little black seeds, then grind them to a fine powder. You can use a pestle and mortar or coffee grinder. Add the spice to the cake mixture.
Transfer the cake mixture to the lined tin the smooth the top level. Bake for 30 minutes, then turn the heat down to 160 C/140C fan/gas mark 3 for a further 25-30 minutes or until the cake is firm to the touch.

To make the syrup, squeeze the lemon juice into a stainless steel saucepan then bring it to the boil and dissolve the honey. Add the cardamom pods lightly squashed. Keep the liquid boiling for 4-5 minutes until it has formed a light syrup. Remove from the heat, stir in the rosewater and leave to cool a little. Spike holes into the top of the cake, still warm and in its tin with a skewer, then spoon over the warm syrup. Leave to almost cool in the tin and lift out. Serve in thin slices with a little Greek yoghurt.

The taste of the cake largely depends on the freshness of the cardamom pods and the quality of the rosewater. Please make sure you use rosewater and not rose essence.

How important is posture and spinal motion to your child’s health? Well in short the answer is VERY.

Arif, our resident Certified Chiropractic Paediatric Practictioner and Fellow of the International Chiropractic Paedriatic Association explains the importance of caring for your child’s spine.

Most people are amazed how many complaints are influenced by poor posture and joint or muscle problems especially in the back or neck.

Look at these new shocking statistics
• One quarter of UK secondary school pupils suffer from regular or daily back pain.
• School bag burden was associated with a ten-fold higher rate of back pain.
• Back pain was also linked to prolonged sitting.
• 14 year old school girls have the same incidence of back pain as the adult population.

Parents have their children’s teeth and eyesight checked with preventative and curative treatments, allowing normal development, but your spine is just as important to good health.

Our screenings take about 15 minutes and are £10 all of which will go to BackCare the charity for back pain. They include a questionnaire about your child’s health. Discussing the findings and recommendations directly with the parents and children is an important part of it. We are able to reassure and educate parents in what to look for, or recommend a more detailed investigation of children if treatment is indicated.

Children can suffer back and neck pain just like adults do. There is really no such thing as growing pains, bad posture and poor habits can cause joint and muscle problems exactly the same as adults.

One of the most common complaints we see in patients is scoliosis or spinal curvatures. The causes as to why these occur are still poorly understood, however, they develop in early life. These children will often have a dropped shoulder, one leg turned in or a crooked crease in the buttocks. One of the earliest symptoms can be knee pains or headaches. By the time these children reach adulthood they may have already had knee surgery or be taking painkillers on a regular basis. Early detection could prevent their suffering and reduce the severity of the scoliosis.

In 1994 The Cliffs Chiropractic Clinic pioneered the first spinal screenings for children, which went on to be a national campaign.

Over the last hundred years school furniture has reduced in height by 10 centimetres whilst children have increased in height by the same figure. Additionally the majority of school furniture does not meet the individual and variable requirements for children’s various sizes or support correct spinal posture. The correct sitting position will cause an open body posture with improved lung capacity and hence cerebral oxygenation aiding concentration.

Arif says “Ingatestone and Fryerning School asked me to advise and assist in obtaining and installing ergonomic desks and chairs for their students. They were Britain’s first school to do this with the aim of improving the children’s posture and aid concentration, combining it with a daily exercise routine.

I strongly believe prevention is better than cure and if spinal problems could be corrected early on a lot of suffering in adult life could be prevented.

Being a chiropractor is rewarding in its own right, no matter what age the patient, but to treat a child and see their spine changing shape literally before your eyes makes a lasting impression on their lives, altering their development.”

All proceeds from our child screenings will go to BackCare the charity that provides information and advice to all people and organisations affected by back pain.

A child will not reach its full potential unless it is healthy. As chiropractors, it is our duty to recognise and correct neuromuscular-skeletal disorders and restore postural imbalance, releasing the child or adult to their full potential.

One of the ways that we achieve our aim is to provide work experience to medical students from Cambridge University.

Most recently, Manu Shrivastava, a third year medical student at Cambridge did part of his work experience at Cliffs.

Manu was grateful to Arif, Paz and the whole team for the experience he gained from observing the chiropractors at Cliffs and he was keen to ask patients why they had chosen chiropractic over NHS treatment. As always our patients were not shy in coming forward with their reasons.

Bake off is back so mind your back in the kitchen with these tips from a leading chiropractor in Southend.

That’s right, the Great British Bake off is back and aren’t we all just chuffed about it. The show has become a TV giant and every year it excites and inspires millions of us to get into the kitchen and start baking.

As experienced chiropractors in Southend we encourage people to take up new activities, however, as any professional, amateur or first time baker will tell you, baking can be a physically demanding activity.

Whether you’re baking bread, cakes or some amazing ‘showstopper’ you’re in for a mini workout. It’s part of the fun but we do want you to be careful and look after your back at all times.

Tips on keeping your back safe when baking

Here are our tips to follow to keep your back safe if you’re planning some baking time:
• Ensure the counter you’re working on is set up at the right height. If it’s too low you end up stooping over and if it’s too high, you’ll end up over stretching. Either way you’ll end up you run the risk of putting strain on your back.
• When you need to lift the heavy baking trays in and out of the oven or if you need to lift anything heavy in and out of the kitchen cupboards make sure you do so with a relaxed, straight back and keep your legs a hips width apart and your knees bent.
• When you are carrying any weight then always face the direction you want to go to in order to avoid twisting your back.
• Take regular breaks and don’t overstrain your back. If you can feel it getting tight or feel a bit of pain, just take a short break and recover before getting back into it.

Arif and Steve were seated together at a private dinner hosted by , Denise Rossiter of the Essex Chamber of Commerce at The Roslin Beach Hotel on 2 July.

The event was an informal opportunity for Nora Senior, National President of the British Chamber of Commerce, to meet and have dialogue and feedback from some of Essex’s top businesses.

Chamber of Commerce visit to cliffs chiropractor southendDeemed by the Essex Chamber of Commerce to be one of the county’s most successful and leading businesses, Arif and Melanie were honoured to be requested to host a visit to Cliffs Chiropractic by Nora senior, National President of the British Chamber of Commerce (BCC) on Thursday 2 July.

Nora did not leave empty handed with advice and goodies from the clinic on how to look after her own back joints and nervous system!

Nora is a highly successful businesswoman in her own right being Executive Chair UK Regions and Ireland of leading global PR/public affairs consultancy, Weber Shandwick. She has over 22 years agency experience and was previously Managing Director of Saatchi & Saatchi (North) and founded a start-up company The PR Centre, which merged with Shandwick. A former Businesswoman of the Year, Nora is a regional adviser to the London Stock Exchange.

Nora was accompanied by Denise Rossitor Chief Executive of the accredited local Chamber. Arif and Melanie showed the guests around the clinic and outlined some of the challenges they have faced and overcome in establishing the Cliffs 21 years ago.. Nora was impressed by the enthusiasm and vibrant spirit of the Cliffs team, and commended them on the constant innovation and multiple awards tat have established them as a leading business in the county. Arif also gave thanks to Denise for advising the clinic and supporting the local business community.
